Mock Curried “Chicken” Salad

Back in Asheville there is a health foods grocery store called Earth Fare. It’s similar to Whole Foods, just present over a smaller geographic area at the present. Like Whole Foods, Earth Fare has a fantastic hot and cold bar that Hubs and I love to grub at. One of our favorite dishes is the mock curried chicken salad. 
I’ve been wanting to recreate this dish at home for a while now, but I had a hard time finding the right seitan “chicken” recipe. I think that all changed the other day.
I found this recipe for the seitan, tripled it, and subbed vegetable broth for the water.
The result was some finger licking seitan that Husband and I could barely keep our fingers off of. Even the dogs were hovering around the bowl.
So, “chicken” ready to go I worked on a curried salad using this recipe as starting point. I’m pretty happy with the results, even if I did forget the celery (one of my least favorite foods anyway!).

Mock Curried Chicken Salad
Yields 6 1-cup servings
Ingredients
3 Chicken Seitan Loaves, diced into 1/2 cubes (recipe here)
3/4-1 c. Plain Greek Yogurt or Mayonnaise 
1 T. Yellow Curry Powder
1/4 tsp. Cayenne Pepper
1/2 tsp. Sugar
1 c. Golden Raisins
2-3 Celery Stalks, chopped (I forgot this ingredient in the pictures)
2-3 T. Fresh Parsley, chopped
Salt & Pepper to taste

Directions
1. Mix all ingredients together
2. Eat
